Ingredients

- 2 chicken breasts, diced
- 2 tbsp cornflour
- 1 tbsp oil
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp brown sugar
- 1 tbsp tomato ketchup
- 1 tsp rice vinegar
- Cooked jasmine rice
- Spring onions & sesame seeds to serve
- Steamed broccoli or greens
Method

- Coat the diced chicken lightly in cornflour.
- Heat oil in a large frying pan and cook chicken until golden and crisp.
- Add garlic and fresh ginger and cook for 1 minute until fragrant.
- In a small bowl mix soy sauce, honey, sugar, ketchup, and rice vinegar.
- Pour the sauce into the pan and simmer until glossy and sticky.
- Serve over warm jasmine rice with greens and finish with spring onions and sesame seeds.
