CV KITCHEN HIGH-PROTEIN PORK STRIP BOWL (MEAL PREP FRIENDLY)

* Prep time: 10 minutes

* Cook time: 10-13 minutes

* Serves 2

 

Ingredients

Protein:

* 300g lean pork strips https://thecountryvictualler.co.uk/pork-strips

Base:

* 150g cooked brown rice or quinoa

*1 tbsp olive oil

Veg:

* 1 red pepper, sliced

* 1 courgette, sliced

* Handful of spinach

* 1 small red onion

Quick marinade:

* 1 tbsp soy sauce

* 1 tbsp honey

* 1 tsp Dijon mustard 

* 1tsp garlic clove, crushed

* Black pepper

Method

1. Marinate the pork ( optional but worth it ):

Mix soy sauce, honey, mustard and garlic. Coat the pork strips and leave for at least 20 minutes or overnight if you're meal prepping.

2. Cook the pork:

Heat the pan with a little olive oil and cook the pork strips for around 6-8 minutes until golden and cooked through.

3. Cook the veg:

Add peppers, courgette and onion to the same pan and saute for 4-5 minutes until just softened but still fresh.

4. Build your bowl:

Add rice or quinoa to your bowl, top with pork and vegetables, then finish with fresh spinach.

5. Finish & store:

Drizzle over any remaining marinade or your favourite dressing.

This recipe works best when you make it ahead.

Cook everything in advance, store in the fridge, and assemble when needed.
